Fast and Fluffy Summer Lime Pie

Hi guys. I just HAD to share this with you all. I got to taste this fab pie the other night and when I asked for the recipe I was amazed at how easy it was. I haven’t made it yet myself but plan on it this week. I’m gonna tweak it with truvia sweetened yogurt, my homemade stevia “gello”, low fat whipped cream and a flax and wheat germ infused crust… so we’ll see how that works. In the meantime here is the “original” recipe. Enjoy!!

1 Package lime gelatin- 3oz
2 cartons of key lime yogurt-6oz each
1 carton frozen whipped topping- thawed out OR 1 carton cool whip
1 graham cracker crust
Lemon, orange or lime zest *optional*

In a mixing bowl combine lime gelatin with yogurt, fold in whipped topping or cool whip. Spread in graham cracker crust and refrigerate for at least 30 minutes before serving. Add zest to top of pie id desired.

EASY and it was soooo good!

Upside down Strawberry Cheesecake – Two Ways



Upside Down Strawberry Cheesecake, Two Versions

This is one of our favorite cheesecakes. It is super simple to make and I’ve included my lower fat, lower sugar version as well.

Regular Recipe:

4 cups cream cheese , softened
1/2 cup sour cream
1/4 cup sugar
1 1/2 tsp. vanilla extract
1-1/2 cups whipped topping
1 cup ready made strawberry glaze
1 pint + 1/4 cup thin sliced strawberries
1 ready made graham cracker pie crust
1/4 tsp. orange and lemon zest, optional

In a medium mixing bowl, beat cream cheese till smooth, and gradually beat in sugar.
Add vanilla and sour cream. Fold in the whipped topping. Set aside.
Add 1 pint of sliced strawberries to glaze. Spread glazed berries in layer on bottom of pie crust.
Add cream cheese mixture over glazed berries and refrigerate for at least 5 hours or over night.
When ready to serve add remaining 1/4 cup of strawberries as garnish and lightly sprinkle with orange/lemon zest if desired.

To make a lower fat version. Follow directions above but substitute the following:

4 cups low fat cream cheese for regular
1/2 cup low fat sour cream for regular
1/4 Truvia (a stevia product with no aftertaste) for sugar
1- 1/2 cups low fat cool whip for whipped topping

The results of the lower fat, lower sugar version are wonderful. Be sure to sub with LOW FAT and NOT fat free versions
as the fat free products do NOT yield a good result with this recipe.
